To the question of no effects of Gravity in space. If you are in a ship, and say there is 0 g enviorment in the ship, it reasons that the ship would accelerate around you, and hence pin/throw you against the bulkhead. IE R2-D2 didnt roll backwards when the falcon jumped to light speed, the ship moved under him, and his wheels let him roll. Thats just me thou using the old "object at rest tend to stay at rest, object in motion remain in motion." rule.
As to get around the high G try this. AS the ship gets ready to go to FTL, the crew enters a type of hyper sleep in an "acceleration couch." (Yes I ripped this idea off from Event Horizon) Once into the void, the crew awakens, takes care of any house keeping, and gets ready to drop out of the void, they re enter the couch.
