EDIT: +7 as an average 1st level character must take into account an average 2d4 roll, right?? So maybe just add the +5, since an average 2d4 is 4 and the +1 is for the profession roll at 2nd level?... hmmm.

Yeah, just use the average for any roles you need to make. Assume you made the profession check gaining a level.
