We love and use Grey Whale at home. Extremely nice gin.I like a number of gins, but Grey Whale was the first I ever really enjoyed as a martini. I should have asked the bartender what vermouth they used, too. :/

It is as @Mannahnin said. I would only add that some recipes recommend using a scoop of vanilla ice cream instead of cream and mixing it in a blender. In my opinion, that's the way to do it.
I remember making my first "real" sours in 2020, when I got more into home bartending. With simple, lemon, and egg white. Such a revelation compared to the sour mix junk I drank for years in clubs.
I think you "get" to alternate those with cream-based drinks, so everything curdles in your stomach.Hell is actually just an infinite sports bar, and all they serve is sours made from a powdered mix, heavy on the sour.
