For one on one, go outside the rules and allow the player to hire as many henchmen as he can afford.

Henchmen in my campaign work like this: they cost x silver pieces per day in wages and take a half share of XP and they'll do what they're told. E.g. a CR 1/2 henchmen costs 2sp per day. You can hire as many as you like but each day when they want paying, if you can't pay them, then they're off. Also they are not stupid; it's danger money they're getting and not death money, they will not put their hands into pits of snakes!

Henchmen run this way work really well. They also allow the player to be a caster type if he or she wishes and go out on journeys in large groups into the wilderness... albeit it's going to cost in silver and in XP shares to do so, so the balance is there. This is the Kingius Henchmen system.
 

Is that half a share per henchman? Or for all henchmen together? If the former, it seems very expensive, particularly for weaker henchmen.
 

Yes, half a share per henchmen. It might seem expensive but these people are putting their lives on the line and no one is forcing anyone to use them. If a player wants to he can hire some help. Bear in mind that 3.5 is designed around a party of a small size (4) and the CR and XP are all calculated in the base system around this assumption. So the henchmen system lets players bring far more to the table than this; however their rate of advancement is slowed accordingly, which it should be. It's not some kind of cheat, but a powerful option for players who can carefully weigh the risk/benefit ratio. As a first level solo mage, hiring 4 henchmen is a no brainer.

Also, if a character dies, no problems, here's the henchmen, here's his XP, go give him some class levels and let's carry on playing.
