I take your suggestion to heart, because Bahamut is very much a good deity: he's kind, patient, wise, and he hangs out most of the time in the form of an elderly man with cute birds. He's not really a good fit for the "stern champion of order" player fantasy. Maybe Helm or Hoar? They're both very much lesser players among the divine powers, but maybe I should include shorter write-ups for them.Currently running a campaign set in Faerun, but not organized the pantheons (tm) down to a core set (the party only has one cleric).
Looking over list, I think the suggestions ppl have made fit what you desire well! My only leaning besides including Tymora would be to urge having a more neutral deity of Justice have a place; mainly because notable militaristic orders in Faerun who played a significant role in that world, were founded on their precepts.
I ended up including Sune because of Minsc and Boo's Journal of Villainy, which has a very evocative (and surprisingly militaristic and overzealous) take on Sune's Faith. I am leaning hard on that direction, which I think is also a common player angle.
I'm currently working on the document, have gotten through Sune, Lathander, and Selûne. I may post it here afterwards, depending of when I finish.

Cult Outline
I also try to write a short, three paragraph or so myth that goes into the first section to give people an idea of why an adventurer might join the faith. I try to keep the whole thing to 1-2 pages, depending on how widely spread the entity's faith is.
- Myth / History; The entity's spiritual role, such as God of Farmers, Son of Earth Goddess
- Nature / Place in Society; The temple's mundane role. Popular amongst farmers, Leaders of peasant revolts
- Organization; Salient details of the temple itself and its workings. What do you see when you visit the Grange?
- Lay Membership; Who joins this temple and what benefits do they get? plainfolk and general adventurers; +1 vs rats?
- Cleric Membership; As above, but those who are actually clerics, maybe druids depending.
- Major Powers; Anything special about the high priests? Are there any? Is this the place to come for raise dead, commune, heal, or call down SmiteFoe2000?
- Allies and Servitors; Who are your friends? Healing discounts from the Earth Mother temple? Snakes leave you alone? Special spells such as Cat Guardian- Daily ritual to keep grain stores free from rats?
- Special Stuff or Cool Details; Wizards who join this faith never have rats as familiars and twice the chance of a cat familiar.
I have pantheonic temples with people able to pick a specific god as sort of a "patron saint". But the template still works.
