Cookin again

This was tonight’s appetizer & dinner.

Appetizer: sliced honeycrisp apples with radish sprouts, sliced Swiss cheese, and wrapped in prosciutto strips.

Entree: chunked rotisserie chicken breast, sliced mushrooms, broccoli & cauliflower florets, sautéed green & yellow onions, parsley, salt, garlic powder, and ground black pepper, in a sauce of butter, EVOO, Sauvignon blanc, pasta water, and shredded parrano cheese. All tossed in the pan with egg noodles, then plated.

The appetizer was kind of fun. I’ve seen variations on this theme, with different apples (fujis were common), cheeses (mostly cheeses like cheddar or parmesan) and different greens (like arugula or watercress). I think the key is aiming for harder, sharper cheeses and greens with a bitter and/or peppery taste, as counterpoints to the sweetness of the apple and saltiness of the prosciutto.

One note on the approach: I tried slicing it lengthwise in quarters, but that resulted in slivers that were too fragile to easily wrapped the apples, sprouts & cheese. Cutting it in thirds or halves- and using toothpicks- would result in a snack that’s easier to make AND eat.

Breakfast for dinner is something of a cherished thing around here.
Ditto, although I need to work on my omelette technique. I’m out of practice and obviously off my game. I hadn’t made any since sometime in 2022 when I made some last month. Those- and tonight’s- were both overcooked and unaesthetic. Very unlike what I was doing last year.
 

This weekend is Rib-A-Thon, an annual barbecue ribs competition. I've never won 1st place, but I've gotten frustratingly close: I've gotten 3rd place in 2016, and 2nd place in 2019 and 2022 (the 2020 competition was cancelled because of the pandemic).

This is going to be my year. That trophy will be mine.

I never picked up the trick to omelettes. I just scramble eggs with stuff in them. :LOL: Or we poach eggs in something tasty.
 

Apparently the British dip their chips in curry sauce. Barbaric hedonists. We had left over curry vs sauce.

I like my fries seasoned by, topped with or dipped in all kinds of things. Simply salted, salt & pepper, lemon juice & pepper, Cajun seasoning, Tajin, malt vinegar, brown gravy, mayo, rosemary & olive oil, my homemade dip*, chili, chili & cheese, honey & black pepper, honey & Chinese hot oil, bulgogi, vanilla shake, and even occasionally ketchup with pepper.





* 50/50 mix of yellow mustard and steak sauce (preferably A1), and then spiced up with Tabasco and black pepper.

So one of our locals has been disappointing us. Price hikes and decline in quality. We are in a quest for a new favorite.

Place we had been to previously that was decent has new owners. Decor is very out of date but oh well.

Their cabinet selection was very pleasing to the eye.

Wife ordered her traditional eggs Benedict.

Both ordered Mocha coffee and split a cheese roll. Initial impressions were very positive on the starters. Alot of places have meh coffee and cheese rolls.

I ordered pancakes. Don't go for pancakes to often. More of a dessert for me.

Apple crumble pancakes. Diced apple, crumb and modest amount of maple syrup.

And for Father's day they threw in this for free.

Father to a cat cheers. Food was very good pancakes some of the best I have had, service was great, easy to get to and parking and it's about a Mile from my house. Added bonus comparatively cheap.
