About two months ago had some friends over as a thank you and prepped a little dinner for them

The sausage is called Boerewors, I cooked it with lemon (Greek Style). It is spicy enough so you don't need to add anything but oil.

The honey-lemon chicken was cooked with your traditional virgin oil, salt, garlic and onions.

The lemon- roasted potatoes had salt, pepper, some onion and origanu/oregano and fresh thyme which I grow.

The pork roast was cooked in virgin oil with apples pieces, plenty garlic, salt, a honey-mustard paste mix and likely a spice but I'm forgetting which.

Served with a coleslaw and a standard salad, cooked rice with peas and corn and some butternut drizzled with cinnamon.

I don't believe in the no-win scenario
Did breakfast for dinner tonight:
It was all good, but apparently, my cheesy grits were superior. Our houseguest went back for THIRDS!
Grits done right are out of sight. Most of the times its some insta box crap. At least in Yankee country.

Grits done right are out of sight. Most of the times it’s some insta box crap. At least in Yankee country.
Worst grits I ever had were at a hotel breakfast in Texas. They were sweet.😳

Related- the worst oatmeal I ever had was at a (different) hotel breakfast in Texas. They were salty.😱

Just a tip. If you’re making burritos, especially with leftovers, you can really step up the flavor by cooking your burrito after it’s wrapped. Just be sure to fold closed both ends. Pan on medium heat, no oil or fat. Burrito in pan. Press down a bit to slightly flatten the burrito and give it a few minutes on each side to warm it through, melt the cheese, and brown the outside. Sometimes simple things can make a big difference.

Made poblano pepper and cheese tacos tonight.

1 poblano pepper per 2 street tacos. Cut them into strips or dice them. Saute them with a splash of oil or fat. Cook them enough to get some color. Add cheese of your choice, either sauted and melted with the peppers or added at the end. Melty cheese blend or queso fresco. Onions optional, either sauted or added after. It's a dead simple taco, but tasty.
