An attempted omelett with chantarelles, red onion, bell pepper, leeks, red chili, and cheese, and one small tomatoe. I need more practice....

edit: it tasted quite ok though. even if the presentation leaves room for improvement.

NGL- that looks tasty!

But you’ve overstuffed it. A filled omelette should be rolled up like an eggy burrito. Your picture shows enough filler for SEVERAL omelettes!
 




Anything Frittata

6 eggs
1/4 cup heavy cream
1/2 tsp salt
1/4 tsp pepper
1 cup shredded cheese
2 cups add-ins

Preheat oven to 350F. Use a 10" over-safe, non-stick pan.

Thoroughly whisk together the eggs, cream, salt, and pepper.

Prep and cook your add-ins.

Drain any excess water or fat from add-ins.

Add egg mixture and combine.

Bake for 10-15 minutes.

When the top is set, it's done.

(It always takes 15 minutes.)

Let cool for 3-5 minutes. The frittata will pull away from the pan. Flip it out onto a plate and cut into slices like a pizza or pie.

We just did a sweet potato and chorizo frittata. It was delightful.
