Looking at the full-sized preview for AC5, you can change the background color of the character sheet. I don't see that option for the others.

(Funnily enough, you can also turn the watermark off on AC5 preview - won't say how, but it's an obvious oversight - and have a character sheet you could straight out print, in your choice of colors...)
