The 3E sourcebook "Sharn City of Towers" has about a half page description of the sewers. Some of the main details:

-clans of scavengers (mostly goblin) pick through the waste for anything of value. Territorial, often violent, but may be bribed to help adventurers.
-large "midden chambers" collect the solid waste. Vermin, oozes and who knows what else feasts on the waste.
-smaller tunnels channel water to "purification chambers" where magewrights protected by city watch use stones of purity to clean water. Points of law & order for your party to avoid.
-connections to UnderSharn which a quintessential "dungeon" where anything goes.

So it shouldn't be too hard to cobble together a quick adventure based on the above ideas
-A midden chamber where the PC's fight oozes (if the PC's hired a guide to lead them through the sewers he gets eaten first!)
-the PCs stumble into a purification center where they need to fight or fast talk the city watch
-swarms of giant rats chase the PCs into a section of UnderSharn filled with dologaunts/undead/etc.
-PC's enter the territory of the Red Jackals a clan of shifter scavengers. Likely a combat encounter but diplomacy is possible.
 


Just use the sewers map from Oblivion ;)
