By Challenge Rating the dragons in the book are:
  • Ancient crystal (19)
  • Ancient topaz (20)
  • Ancient emerald (21)
  • Ancient moonstone (21)
  • Ancient sapphire (22)
  • Elder brain dragon (22)
  • Ancient amethyst (23)
  • Ancient dragon turtle (24)
  • Gem greatwyrm (26)
  • Chromatic greatwyrm (27)
  • Metallic greatwyrm (28)
  • Apects of Bahamut and Tiamat (30)
Interestingly, it appears that the great wyrm category is divided into three -- gem, chromatic, metallic -- rather than by each dragon type.

There's also an alphabetical list of all 20 dragon types in the book:
  • Amethyst
  • Black
  • Blue
  • Brass
  • Bronze
  • Copper
  • Crystal
  • Deep
  • Dragon turtle
  • Emerald
  • Faerie
  • Gold
  • Green
  • Moonstone
  • Red
  • Sapphire
  • Shadow
  • Silver
  • Topaz
  • White

The previous Draconomicons focused solely on the traditional 10 metallic and chromatics. This is definitely a marked improvement in coverage. We'll probably see more info on gem dragons here than everything from earlier editions combined!
The 3.5 Draconomicon had a 50-page section on new dragon monsters including undead and dragon-like things. Of note were the category of new true dragons, the planar dragons (Battle, Chaos, Ethereal, Howling, Oceanus, Pyroclastic, Radiant, Rust, Styx, and Tarterian) in addition to entries for Fang, Faerie, and Shadow dragons.

The 3.0 Psionics Handbook had a 10-page web enhancement with 8 pages on the gem dragons.

Yeah, but this book will have that, too, most likely. The 20 covered dragons are from the chapter with random NPC and Qyest tables, not the Bestiary.

These are the types of Gem Dragons within the category as a whole. Of them all, yes there "is" a Crystal and Obsidian Gem Dragon listing. For both of those, unless they make a surprise appearance in the book, it looks to be a Steel Dragon type of refluffing/using stats/homebrewed template to cover those for 5E.

Ruby itself is exclusive to Saridor itself.

There is also a Lesser Dragon variant of the Gem Dragons known as Amber.

I was talking about solely dragons, not dragon adjacent monsters - which we already know this book will include as well. Did any previous book contain more info on dragon turtles like we are getting here?
