Well, you can find some detailed information on Darkhold in the old 2E Strongholds Boxed Set.
More information is spread out in several different sources, such as the 2E FR Adventures and Cloak and Dagger.
A deadly undead warrior called the Pereghost dwells in the castle, but I don't remember his religious affiliation. I think he was a Banite, which could make for some interesting conflicts between him and the Cyricists.
I know Semmemon left Darkhold for fear of an attack by Manshoon or Fzoul. So I'd say you free reign to detail the keep however you wanted to...

"Sememmon commands the forces of the fortress known as Darkhold. Oveer 1000 Zhentarim reside there under the mage's command. The Pereghost serves as Sememmons military commander.
While Darkhold's public purpose is to be an outpost of civilization in the Far Hills, a rest stop for trade caravans (Zhentarim only), and to facilitate relations between the Sword Coast and Inner Sea, its true mission is much darker.
Darkhold often sabotages trade in the area by strategically importing monsters onto common trade routes. One favorite tactic of Sememmon and his followers is to use wyverns to carry deepspawn creatues (bred in Darkhold's depths) to competitor's trade routes around Darkhold into western Cormyr."
I know there is a listing of equipment for Zhents in the 2e book "Adventures", and I do believe they all wear Full Plate and carry swords, shields and bows (might be crossbows).
In 2e The Pereghost was a LE hm f12. He is the one runnign Darkhold in 3e.
