The rules don't really cover characters deliberately jumping into a gelatinous cube. A rules lawyer might argue that since it hasn't used it's engulf ability, they take no damage until the start of the cube's turn*. Which gives them up to 6 seconds to escape (e.g. by exploding the cube, which is what I bet happens next).

*NB, as a DM, I would not rule this way,
They'll probably have a sexy little sizzle-wound over one eyebrow or on one cheek, and their clothes conveniently and attractively tattered, like many action flicks enjoy doing to the hero (with no other health consequences).

Edit: Heck, that's probably how I'd describe any PC that manages to inconsequentially loose a few HP while inside a cube! (Though I usually at least try to remind the player that it hurt and they are not comfortable afterward!)

I'm having Manglors flashbacks just thinking about it.

This issue is, whilst you could certainly make a squishable clear cube, if it was able to retain its shape, poking something into it would create a permanent hole. Eventually the holes would cause it to fall apart. In order for it would to be able to heal and still retain its shape, you would have to have an actual living organism....

The toy you are looking for, you could make with gelatine and an appropriately shaped mould. It just wouldn't last long. It would be non-toxic though.

This approach appears to be specifically aimed at collectors, as a display piece, rather than a toy for children. I suspect owlbear and displacer beast plushies will go down better with the kids.

Was about to come and talk up Glabbagool, also a favorite in our group. Sadly, turns out gelatinous cubes are no match for

Glabbagool was ridiculously popular with my party, despite having accidentally engulfed some of them multiple times due to battles in tight quarters. After they went through the whole Myconoids section, they were offered fast passage to Blingdenstone by boat, which I assumed would lead to some tearful goodbyes as obviously a gelatinous cube on a vessel made of organic matter wouldn't be practical.

Instead, it led to an immediate brainstorming session about making it work as they were not going to leave him behind. I went along with it, with the result being the Underdark's first ever Zhurkwood boat with crazy-paving decking.
 

Glabbagool was ridiculously popular with my party, despite having accidentally engulfed some of them multiple times due to battles in tight quarters. We had a similar incident in a Ravenloft game, where the wizard's horse was the only original mount to make it through a number of adventures. The party needed to travel via Nathan Timothy's paddleboat, and the wizard ticked him off for some reason, so he wouldnt let the horse on the boat. This also prompted much brainstorming, with the eventual plan being to summon a grue to ride the horse downriver to the next destination. I explained that while it would probably work the horse wouldnt exactly be the same ever again. And so a tearful goodbye was said to Fernguy.
