Gibbering Mouther

How should a character overcome the Ground Manipulation ability of a Gibbering Mouther? Say a character sinks into a cobble stone street. How do you resolve this "pin". What should the "grabble" DC be set at?

Try treating it as being pinned by the monster itself. I would give the Gibbering Mouther a +3 on the grapple check:

Grapple: BAB + STR + Size

BAB = I would say +3. It gets a +4 on its bite, but it has Weapon Finesse (Bite) with a Dex of 13 (+1).

STR = 10 so no bonus

Size = Medium, so no modifier.

The grapple check sounds like a good idea.

You might want to add a bonus based on what the "pinning"
material is though. Maybe Grapple+Hardness?
