I take it from the thread title change that they are changing Keep on the Borderlands to Heros of the Borderlands, for reasons unstated?

The classic Keep on the Borderlands isn't really about the keep, but more about the Caves of Chaos. Seemingly, this product will expand on the actual keep as well as the wilderness in between and around the locations (in addition to likely giving the Caves a serious reworking).

Storm King’s Thunder features some giant children — for instance, the fire giants have two teenage children who use half-ogre stats.

The 18 yo daughter is more of a RP encounter, but her 15 yo brother will fight you.

I’m pretty sure King Hekaton’s daughters are all adults. I can’t remember if there are any other giant children anywhere.

My guess is that the choices are only

Class, Background, Species

All the choices within those are already dictated.

Given this format, I expect the Caves to be completely re-worked and reduced in scope quite a bit. I'd be surprised if it was the "Evil Humanoid Hotel (with Bonus Evil Temple)" of the original.

Yeah, the first thing I thought when I saw this was "well hopefully they'll make the Caverns of Chaos actually interesting and fun"
