Unclear: the NPC Rave table in the 2014 DMG provided stealth playable options, so it is possible that the "Conversion Guide" might essentially provide playable options in a similar manner.
Conversion Guide is for mapping monsters that were in the 2014 Book, but not the 2024 book into equivalents.

Like my guess it will say stuff like instead of using Bugbear use Bugbear Warrior.

Maybe: I think it ia likely that it will have an equivalent to the NPC Rave table from the 2014 DMG, to make it clear how to customize NPCs into different Species.
 


Having this confirmed now, my guess is that non-humanoid peoples like goblins, kobolds, kenku, etc. will still be able to be played as PCs, - I mean, we still have Monsters of the Multiverse and the Tasha’s custom species option. The default assumption will just be that they are not typically PCs.
You mean rare races, like Tieflings, Drow, Gnomes, Half-Elves & Half-Orcs, and Dragonborn? 😉

Meanwhile both A5E and Tales of the Valiant made Orcs and angel-bloods a core ancestry before D&D proper did, so it's really having Goliaths that sets Core 5.24 apart from the competitors in this regard.

I never bought MMotM. Is there anything mechanically interesting about the Goliath either there or in the 5.5 PH?

The former is just an update of the VGM version, but the new PHB version gives them that ability to temporary become Large, as well as getting different lineages based on who their giant ancestors were--Hill, Stone (classic Goliath), Frost, Fire, Storm, and Cloud. Some of the new lineages are pretty neat. Cloud Giant gets a bonus action teleport for instance.
