Ring of Sustenence. Celestial. Paladin Mount (or Awakened Special Cohort).

If you ask me, even a celestial creature is going to want to eat the horses. Its a griffin's natural prey. Celestials need to eat something, even if it is ambrosia, in my campaign. And theres no ambrosia down here on Aleira. Plenty of horses though.

As for the ring of sustenance, I like to play that while you no longer need to eat or sleep, you still feel uncomfortably tired and hungry while wearing it. You look a little strained, as the ring draws energy from the universe to feed you directly. While you might be starving in your mind, your body won't cannibalize itself.

Its like magic preservatives!

Invest in a Stone Horse. Magic item from the DMG. It's an animated statue of a horse. Full sized.

And say goodbye to all your mount-losing problems.

This one doesn't fly

How about a bear? You can get them at various levels without too much difficulty. Black, Polar (Brown only if you are small or you enlarge it every time you ride :D) or Dire, legendary or celestial; if someone sees a guy on a bear coming they get scarred. The bear is a great combatant, especially if he grapples a foe and then you stab it.
