I haven't seen too much anime yet - I'm still working through my Netflix queue - but I liked .Hack/sign, about a MMORPG player who gets trapped bodily in the game.

Oh, yes!! Definitely .hack//SIGN, if you like convoluted plots and don't expect immediate resolution. My fiancee hated it but I love it. Great character design, too.
Naruto is great.Brilliant main character and storyline. It really worths your attention.
I found the first 100 episodes from a friend (20 min each) and i watched this non-stop within 2 and a 1/2 days!
Samurai Champloo : currently showing on AS, so its free to watch. a great series in the tradition of Cowboy Bebop (instead of spaceships and jazz you get samurai and hip-hop)
Inu-Yasha : I probably spelled it wrong, but its a good... if very long... series
Ruroni Kenshin : long series, but a good one. I'd be wary of the movies, the tone is drasticly different.
Fullmetal Alch : another good one, its like a good Evangelion
Record of Lodoss War : The OVA and the TV series are well worth watching... in many ways its like a tv D&D series.
The Big O : Giant Robot action... a decient series
Slayers : very funny, with lines like "I'd tell you my name... but you'd only get it dirty" and "you should be thankful I struck you with the back of my blade... oops its a double edged sword"
Glad to see many people recommending Samurai Champloo. I have to say, since watching the Fan subs, it's probably my most favorite semi-current anime around.
Another one to watch, besides the most excellent SC and FMA, would probably be Basilisk. Obviously I support fan subs, but seriously folks I will buy the DVDs for this series. Basilisk to me is the new Ninja Scroll.
Also look for IGXP as it is done by IG. Productions. They do some great stuff, (GitS being one of them.)
Burst Angel and Gun Slinger Girls I'd recommend too. Fun did a great job dubbing those two series.
I'll go ahead and second Naruto. There's fighting, tournaments, and crazy ninja powers(because ninja are awesome), yet despite all that, manages to avoid being like DBZ at all. The characters are good, the story's good, with some interesting twists. I'm still rather puzzled the series turned out so well, honestly.
Okay, of the ones listed here, what ones have decent DVD releases?
I've heard bad things about the Full Metal Alchemist and Ghost in the Shell releases, so I've avoided them. I've heard great things about the shows, mind you, just that the transfer over to DVD wasn't that great.
And Cowboy Bebop, that's one I'll have to look up, as well.
