The other thing you could try is to go back to early 3e modules. Because there weren't as many rules and variants then, the modules also tended to be simpler. The first such module was The Burning Plague (google turns it up easily).

There used to be a publication called "Dungeon" that would have a handful of fully-developed adventures in each issue. I used to subscribe to it, but my subscription was up just about the same time as my job transferred me halfway across the country, and I never picked it back up.

When I was following it, they were 1e and 2e adventures, but I presume they went on to do 3e as well.

Can anyone confirm that for her?
 

I managed to find a few, and I made one for my boyfriend to play, and I have to say being in the DM chair was a lot of fun, and he REALLY enjoyed the story. It was short mostly because it was just a trial piece, but thanks to the advice from you guys I managed to make the whole thing fun and exciting.
