D&D 5E Rogues (melee-based) & Two-Weapon Fighting: Why not always do it?

Thief rogues can use their Cunning Action to Use An Object. What does that mean? Cunning action to throw acid and alchemist fire in people's faces!

One thing that I find rather curious is that no one is ever bringing up Savage Attacker when discussing the rogue. Crossbow + Sharpshooter comes up a lot (which I'm decidedly unimpressed with for the rogue). Resilience and Skulker, sure. But Savage Attacker is pretty much made for the rogue! Roll twice, take the higher total! What's not to love?

Or how about Sentinel? It raises your chances of an AoO, which has your full sneak attack damage!

Savage attack: Are you sure it works? The feat specifies weapons damage dice...

Also use object contains at least the following stuff: pull a lever, lift an object, use potion...

Savage attack is just the weapon dice it is not like the critical hit wording that says all damage dice, so not much synergy for rogues it is barely a decent feat for someone using a d12 great axe.

Use object and interact with object is not making an attack with a thrown item like acid/oil/alchemist fire those things are attacks.

Sentinel makes you the target, the person doesn't want to move away because they will provoke an attack, they don't want to attack someone else besides you because they will provoke an attack. Very rarely do they trigger those attacks, so very rarely will the rogue get those extra sneak attacks in. What does happen is what the feat is meant to do and makes the rogue a sticky tank, but that is normally not ideal for rogues.

That would be classed as an Attack. You interact with an object - the example given is drawing a sword - not a person.

The rogue is the best class to haste. You can use the extra attack to ready to attack on another player's turn in straight melee combat.

Then again you can kill stuff and never be seen on your own. I do that quite often when scouting ahead.

Rogue isn't the best in straight melee combat. Fighters are the best. Paladins and barbarians pretty good. Rogue is best when moving, hiding, and taking things out before your party even starts combat with the main enemy. That's why I like to use ranged weapons.

99% of the time you want to dual wield as a melee rogue, it was true in 3rd edition too.

The other 1% of the time is normally because of utility things that don''t come up all the time. You need to be holding a torch or lantern, you need a free hand to climb a ladder or hold onto something, speaking of holding there might be a rogue grapple build but I doubt it very little synergy.

Smart Rogues in 3E/PF use great swords.

THe bonus action is better used if you have the healing feat or a lot of potions. Otherwise dual wielding is a no brainer but we have a theory about that as well but it involves fighter levels and using your boonus action to use the shield master feat to set up advantage.

Another great trick is to run up, attack, then run away, using your bonus action to take the Disengage action rather than dual-wield. Great for getting around the cover your friends give the monsters, while still having the opportunity to sneak attack.
