No if you wanted to attack their weapons and destroy them etc. you can take a -2 for a large weapon (like a rifle or big wrench) or -4 for a small one (a pistol, etc.)

There is a talent that allows you to cut off a limb instead of killing someone (if you reduce the targets hit points to negative). I am considering allowing anyone proficient with lightsabers to do it...

Yes, you still have to hit the opponent's Reflex Defense...

No but both you and this Gand need to make Initiative checks to determine when you can 'ready'

Also you and the rest of the group has advantage on any intimidate checks so you can roll again if you want.

Okay so my attack roll is: _: 1D20+5-2 = [10]+5-2 = 13

Damage if that hits: _: 2D8+3 = [2, 4]+3 = 9

Same target because I feel like I missed: _: 1D20+5-2 = [2]+5-2 = 5

Okay I'm not even rolling damage for that one. Do I hit with the first attack?

If you are attacking the Aqualish no, his Reflex Defense is 14... but remember you have 5 Force Points. You can spend them after you make any d20 combat, skill or ability check. It adds +1d4+1 to your total. Just as an FYI...

Note: Intimidation and Persuassion, etc, are Actions as well, meaning you can't usually do something else that also requires an Action without having some sort of Feat or Talent.
