Let's assume he coult take an AoO.
So, basically, he wouldn't be able to attack while a guy is standing right in front of him, but as soon as he drinks that potion, you best believe he's sending a fist your way.
Does that make any sense? Hence, no AoO's. Seems easy enough to me.
I would allow him to resist trips and the such, with a -2 penalty. If he still has an AC, meaning he can at least attempt to dodge something, he should be able to avoid a trip, albeit at a penalty.
