While the skeletal warhorse is an iconic staple to any Death Knight painting, the monster leaves a lot to be desired, same with skeletal minotaur and ogre zombie, but all in good time.
Ghouls are the quintessential terrifying undead in D&D. Paralysis, followed by the feasting on you or your friends still living body. Kingdom of the Ghouls by Wolfgang Baur so many years ago in Dungeon solidified the Ghoul as a fantastic undead foe for all levels.

I’ve lost a character or two to Ghouls and a failed saving throw over the years. A pack of Ghouls is one of those swing encounters, where if the dice fall wrong, what should’ve been an easy encounter becomes deadly.

Also, they are possibly Exhibit A as to why you Never Split the Party.
