A character is being converted from an older edtion that has a Sword of Sharpness (longsword), how would you handle this weapon in 3.5? Thanks!

I'd say keen, plus increase the critical multiplier to x3. (In my games, Vorpal is a +1 bonus ability that increases critical multiplier by 1.)

Everybody in the group agrees that it would good to have the weapon be as deadly and feared as it was in the old days. In first edition we would determine which limb was removed based on a die roll (if you rolled the natural 20 of course). :D

The Vorpal blades were still feared the most because they usually meant instant death.

Just make it a minor artifact; that way it can break the rules. On natural 20 rolls, the opponent loses a limb--just like the good old days.

Or, if you want to do away with the old glory of previous editions, you could make it keen, but a bit keener than usual (say, have the sword's threat range be 15-20 instead of 17-20).

New Sword power....NOT!!!

Sharpness: A sword or any other bladed weapon with this ability is always made of Adamantine. and on a roll from natural roll from 18-20 vs. an opponent of equal size armored or not it will sever there extremity. For a creature or person larger than the wilder it 19-20 to sever there extremity. And vs. Solid stone/ metal constructs and there type a natural 20 needs to be rolled. To determine which extremity gets it make a small list example: 01-02 Left arm, 03-04 Right arm, 05-06 Left leg, 07-08 Right leg. Or for a lizard man 01-02 Left arm, 03-04 Right arm, 05-06 Left leg, 07-08 Right leg 09-10 Tail. I would put this in value at just under vorpal because you are going to take the critical damage and lose an arm so its still nasty........But that’s just my way.
