I think there's a fine line between paying homage to common western tropes and being predictable. This show is unfortunately on the side of being extremely predictable (and I think that's a fair judgement after 4 episodes). While throwing in the occasional trope is fine in my opinion, when the show feels like they are going through every trope one by one in very familiar ways, it just ends up lacking any excitement. Firefly also had western tropes, but it was mixed up with plot twists and clever humor. There just doesn't seem to be anything in The Mandalorian that is particularly clever.
Saw episode 5 today. It's not bad. I think I liked it a little more than last week's episode. I do feel like the show is a little disjointed, and the episodes don't build on the previous ones as well as they should. I wouldn't say there is anything especially clever or surprising in episode 5 either.
I'll tell you what I would like to see, and I don't know if this will happen in season 1 or not: a new Hutt CRIME BOSS. And not a CGI one, but a puppet like they did with Jabba in Return of the Jedi. But not a Jabba clone but a new Hutt with a new personality and agenda and quirks. And yeah maybe a few slave Leias, sure, why not.
