You could let the monk choose what alignment to penetrate.

This works. Or you could let them take Fiery Ki Fist or Fist of Iron feats. Both let you use a stunning blow to either add +1d6 fire damage (fiery Ki fist) or +1d4 normal damage (Fist of Iron) to an unarmed attack.
