dagger tossing is always popular with my players.

Throw from 30 feet away, target is AC 18, each contestant gets three tosses, keeps the best score. Each round, the low man is out, until you have a winner.

Then there's always halfling mumbly-peg.
 

We'll have to add mublety-peg to the print version of the book, but simple dagger tossing is boring. I much prefer Drunken Daggers. You get two people to stand 10 to 20 feet apart, against opposite walls. You paint or carve a target behind each person, maybe 4 feet in diameter (use smaller targets for halflings, who have to stand on a stool). Then, the two players take turns taking drinks and throwing knives at each other.

The goal is to stab the knife inside the target circle, without hitting your opponent (and the opponent isn't allowed the dodge). The game gets progressively harder the drunker you get. If you flinch, you get a foul, and if you hit outside the target, you get a foul. Hitting your opponent, or getting three fouls, loses you the game.
 

One time in Sports Illustrated, I read about a wife carrying contest. A group of husbands would race through an obstacle course carrying their wives. The winner gets his wife's weight in beer.

Less Wife: Less Beer: Easier race
More Wife: More Beer: Tougher race

Just want to say that I bought the PDF version of Tourneys, Fairs & Taverns last week, and it is when of the best $5 I've ever spent. really high quality work and it's going to be lots of fun to integrate into my game.

games of chance

For gambling games, if you want a "Straight game" (no character skills/abilities affecting outcome). I would suggest versions of roulette, 21 & craps.

Roulette-lite: characters can put their money down on a number 1-20 and color red or black. Roll a d20 for the number and any other die for color. Real roulette is more complex, I know, but that's the general idea.

21: simple blackjack. Just break out a deck of cards. DM = dealer.

Craps: I don't know all the rules to craps, but why not try something like having them put their money down and roll 2d6. That is the number they are trying to match. 7 ends their turn. Otherwise they get 3 rolls to get the same total as their initial roll. Other players & NPCs can bet on or against the roller with each other. If the roller wins, they get triple their money back or something like that.

Coursing: Have 2-3 dogs per "race." Give each of them a Coursing skill (+3, +5, etc.). Give the rabbit a "Flee like mad" skill :D, Folks can bet on:

-whether the rabbit gets caught or not (even odds)
-which dog will catch it. Give odds based on Coursing skill; less skilled get higher odds (3:1, 5:1, etc).

Then let the rabbit loose and set the dogs on it. The rabbit skill roll is the DC for the dogs to beat. Whichever one beats it by the most (if any) catches the hare. Otherwise, the rabbit gets away.

Folks can gamble on wrestling, the jousts, the archers, etc. etc. etc.

If any characters have any skill in something like "Profession: Gambler" or "Craft: Gambling" you might just give them a flat DC to see if they make or lose money, but that would be if they didn't want to play it out.

I haven't read your "Tournaments" pdf, so sorry if this is re-hashing old ideas.
