Counterspelling, even after writing feats to make it more appealing.

combat maneuvers
disarm, sunder, overrun. Until our last combat that included bullrush it failed just like tripping without the feat.

Epic stuff.

I haven't even fully read through the 3e DMG so I couldn't even say all that I'm missing out on.

Re: combat maneuvers:

Back in 2e it was mostly "I hit (roll damage".

Since 3e/3.5e (or, as Diaglo says, 3.11 for workgroups), things have improved tenfold, with Counters (I make these!) and the Action Cards in BattleBox (I make these too!)

You'd hate me then. I've done just about all those, though mostly as a DM. In a non-campaign related epic one-shot I had a monk use trip, disarm, and attack weapon repeatedly to disarm the party. Last combat I had a few ineffective NPC fighters switch to Aid other while the NPC cleric prepped a dispel magic Counterspelling.

The archers dread "attack held item" maneuvers because their bows are so fragile in comparison to everything else. Mostly they stay out of reach but every so often they toss their bows to the ground rather than having them destroyed.

My players rarely use the Aid Other action unless they realize they have little chance of hitting; then it turns into "Aid the Monk" since if he grapples they might get a few sneak attacks off or at least retreat without AoOs.

Metamagic is used quite a lot, though mainly duration affecting. Extend and persistent are used constantly and occasionally energy substitution. I lean towards playing sorcerors so I'm a metamagic fiend whenever possible.

The mage and even cleric loves summonings, mainly due to the HTML statblocks for the Summon spells we downloaded off the net. Life is sooo much easier. Since I have the summoner manage their conjurations it gives them a lot more combat dice to deal with.
