Using Saints as replacement for Divine Pantheons does work rather well, actually. They'd likely have a limited selection of Domains however. Some of the Saints listed have very limited portfolios, such as St. Denis, Patron of Araterre. He'd probably only have Community and Protection as his other Domains.
But then you have others like St. Nicolas, who is the patron of children. But he's also the patron of sailors and travelers. And historically, Nicolas was a fighter too. He boxed Arius' ears because of his heresy during a council of the church.
If you want to run a beast-master character, you could go with St. Francis of Asisi. He spoke with animals.
If you go to a used book store or theological library, there is, out there, a four volume set that contains every Saint of the Western church. The Eastern Orthodox also have a multi-volume tome covering their Saints as well. They contain stories of their lives, which will give you their alignment, as well as an idea of the Domains they would provide.
With Banestorm, you could also add Saints specific to Yrth. If you have some Domains that aren't covered, you simply create a Saint to fill the niche.
For the Muslim lands, you would have to take a different tact. I haven't researched that part out, but it would be a must if you were going to translate the setting completely.
