The vampiric ixitxachitl (good guess on the spelling, btw) isn't technically undead, its an aberration with similar abilities. A vampiric gibbering mouther is just a neat idea though, but I kind of like the idea of vampiric everythings. In a fantasy game, there's a way to make whatever you want, either by ignoring or changing the prereqs, or by just making it a unique creature.
