What have you stolen from published sources?

Like Psion I use a lot of material.

The players have used the following books for their PCs: Arcana Unearthed, Quint Elf, Requim for a God, Oriental Adventures, Epic Level Handbook, Sull and Bones, Relics and Rituals:Olympus, Advance Players Guide, Excaliber, Draconic Lore, Draconomicon, Nightmares and Dreams, Dragon (the AEG book not the magazine), Tome of Horrors, Monster Manual 2, Dieties and Demigods, Path of Sword, and last but not least the Players Handbook. THere are 3 players and they are all 15th level.

As DM I have used 3 to 4 times that many in the year this campaign has gone on.

I don't create a physical list of what can be used, but I know what can be used and I pretty much memorize what is where and link things together in memory. It's not perfect, but I can usually help the player find what they want within what I'll allow.

I have a bunch of books but I don't use many of them.
Current campaign is core + a few UA mods only, and a house rule or two -- mainly roleplaying house rules for sorcery contacting the dark one, etc, no hard rules for it.
Last campaign was core + UA + XPH.
Before that, it was.. core + FRCS + PsiHB 3.0 + a B. Cordell module.
I occasionally sneak stuff from Vampire into my games, generally an obtenebration discipline ripoff, if I feel like it.
I let my players use the class books if they really want to, it doesn't come up much.
I'm having a much easier time including less stuff, and making the rules up myself, or tweaking ones from UA. That book was tremendously helpful, I've used gestalt classes, spell points, craft points, action points, variant classes... very helpful, and consistently Fun In Practice -- a large plus.

Nope, primarily core is available and everything else you ask the DM.
