I'm not a doctor, but I am a potato enthusiast.

The usual problem with potatoes, other than the generic one with carbs, isn't the potato. A boiled potato has plenty of nutrients.

Its that most methods of preparing and serving them are dense with various fats, most of which aren't ideal.

Hmmm. Did not know that.
Yeah it's something I only learned a year or two ago- my wife's diabetic so it was very interesting to compare her blood sugar response to fresh rice or oatmeal, vs. the food after it'd been in the fridge or freezer overnight. Basically, refrigerating or freezing already-cooked starchy foods makes them a tad healthier.
 


Not healthier - freezing destroys a lot of the nutritional value (just how much depends on how fast the freezing process was).

Eating smaller quantities of fresh food is the way to go, especially if diabetic.
I'm not sure where you're getting that idea- freezing foods generally does not destroy "a lot of the nutritional value."
