I don't have carton network so there may be some overlap here...

Berserk is a grim anime that doesn't deal with samurai, but with mercenaries.

Hellsing

Witchhunter Robin

The Guyver (the anime, not the live action stuff!)

Record of the Lodoss War

Heroic Legend of Arslan

Blue Seed

I'm sure there are dozens that I'm just not thinking of at this time.

I'll second Witch Hunter Robin and Hellsing. I also like Noir and Neon Genesis Evangelion, though for NGE, you'll have to watch the different version of the ending because the original is crap. Full Metal Alchemist is good too. I think I just saw that in the stores.

[Btw, have you seen Naruto? The dubbing is horrible and makes me want to cry. :] ]

That's all that I can think of atm.

I'll second Witch Hunter Robin, Hellsing, and Full Metal Alchemist.

I'll add these:
Gunslinger Girl
Samurai Champloo
Last Exile
Paranoia Agent

Like the others have said -- Record of Lodoss War. This is the granddaddy of fantasy anime. It's based almost directly on D&D, right down to the archtypal First Edition party (fighter, magic-user, cleric, thief, elf, and dwarf).

There's also Fullmetal Alchemist, which I think is the best animated series on air right now; but if you've been watching Cartoon Network you probably know that already.

Other good ones I can think of...
Azumanga Daioh
Case Closed (aka Detective Conan)
Cowboy Bebop
Escaflowne
Hellsing
His & Her Circumstances
InuYasha
Paranoia Agent
Patlabor: The Mobile Police
Project A-Ko (but NOT the sequels)
Samurai Champloo
The Slayers

I've never seen Ramna 1/2, but if it's half as good as the comic it's based on, then I definately recommend it.

Slayers: I enjoyed all three series. Equal parts silly and D&Dish at the same time.

Escaflowne: It was this show that made me buy the Mecha Compendium from Dream Pod 9 as it takes fantasy elements and throws mecha into it.

Cowboy Bebop: Yeah, this is one my favorite anime, and it's now remixed in 5.1 surround sound.

Samurai 7: Based losely around Seven Samurai but in the far future.

Full Metal Alchemists: Yeah, this is another one I'm digging as far as the manga goes. haven't checked out the anime yet but it's on the list.

Scrapped Princess is very good so far; I've seen the first two discs
Orphen (not a typo) is another good fantasy anime.

Others I've enjoyed recently:
L/R: Licensed by Royalty
Wolf's Rain
Someday's Dreamers

The current game I'm preparing draws heavily on Hellsing and Witch Hunter Robin. And the brand new Hellsing OAV series starts in December in Japan.

Paranoia Agent looks interesting, it's just hard to catch.

NGE is my all time fav. El Hazzard OAV series is up there, though, as well as early Ranma 1/2 and Bubblegum Crisis, both series. Boogiepop Phantom is disturbing at times. Samurai Champloo is a ton of fun.

I add my vote for Record of Lodoss War. It's very satisfying for fantasy fans, I think, whether you play D&D or not. Be advised that there are actually two series of this, and the second series somewhat repeats what is in the first.

I also enjoy Inu-Yasha and Slayers. I haven't seen much of El-Hazard, but what I have seen I liked, and the same goes for Escaflowne.

If you're interested in something short and humorous, try Those Who Hunt Elves. Don't worry if you like elves; they're not hunting them to kill them. ;)

For great anime fantasy that isn't a series, try Princess Mononoke and Spirited Away. These are some of the best there is. Nausicaa of the Valley of Wind is another good one; it may appear under a different title in some places, but I don't remember what the stupid American title is. Anyone want to help me out here?

I'd also recommend something that isn't technically anime (it's not made in Japan) but is done in a very anime style, and has a great fantasy story: Avatar - The Last Air Bender, on Nickelodeon.
