Getting the crowd into things gets you Heat points. You can get them with a really good interview, doing big damage with a move, stuff like that. Heat points get you all kinds of benefits, but you have to use them up to use finishing moves and some other special abilities.
Managers would have an easier time affecting the card lineup than most wrestles will, mostly because of some special abilites in their class. Not to say a wrestler with a high reputation and some backstage pull can't do it, they will just have to work a little harder.
I'm not sure what you mean by a Survivor Series campaign. A survivor match would probably just use the regular tag rules, with 8-10 participants. There will be rules on running long term campaigns and how to structure your game session to run similarly to Raw or Smackdown. Of course, if you're running a game that you want to feel more like ECW or a Japanese promotion, you can do that too.
Since the WWE is licensing the game, most of the stuff they'll be doing will be focused on them, but the game itself is flexible enough to handle a number of "styles". For example, if you wanted to run an ECW game, you'd just ignore countouts and lower the DC to avoid disqualifications.
