It's not supposed to be "could of done that", it's "could've". So it's legitimate, but misspelled. And probably obsolete.
The thing is that "could've" is a contraction of "could have."

"Could of" comes from people not properly knowing the phrase and just writing what they hear.
 


I am the rare person who loves the fantasy name apostrophe trope. I treat it like it's glottal stop, but with more spittle and Klingon bravado.

I also like to soundly abuse the hyphen like it is a demented Chōonpu. :p

I've used apostrophes to distinguish when vowels are pronounced individually as opposed to as a diphthong (say, like "zoology" would be "zo'ology"), and similarly for distinguishing consonants from consonant clusters (say, like "springtime" would be "spring'time"). Of course this is used solely for made up words where the pronunciation may seem ambiguous.
 


It's not really a peeve, but I do have to kind of shake my head at people who write "walla" when they're trying to say "voilà". And then there are the ones who spell it "viola" but that's a simple-enough typo.
