The thing is that "could've" is a contraction of "could have."It's not supposed to be "could of done that", it's "could've". So it's legitimate, but misspelled. And probably obsolete.
I am the rare person who loves the fantasy name apostrophe trope. I treat it like it's glottal stop, but with more spittle and Klingon bravado.
I also like to soundly abuse the hyphen like it is a demented Chōonpu.

I can't believe I did that. Too focused on coming up with an example I guess. (The first should be "I could have done that." as others have pointed out.)A general one. Writing of when the word should be off, or vice versa. "I could off done that." "Oh, come of it."
