I have my own way of doing Martial Arts in D&D, but, have you tried incorporating it as a Sub-Class?
Like for example a Sub-Class for each type of Martial Art you want to emulate?

I have, and also considered just using multiclassing.

But currently, for my camapign its more something that any character can pick up, and taking classess would be dedication and mastery.

And you can only have one subclass...so that would negate other options, which is not my intention.

I foud most of my documents, and talked with my playtester, and should have a revised doc up in a day or so.
 

So, what I'm thinking about doing, as a result of various discussion lately, is to use and expand upon Kobold Press' Beyond Damage Dice, add a few special attacks to the game, and treat based level martial arts proficiency as part of learning to fight.

So, unarmed strikes deal 1d4 for everyone but only people with martial weapons, and monks, get proficiency, Monks get the ability once per round, or again if they spend 1 ki, to use a special attack as part of an attack rather than in place of it, and the Kobold Press Beyond Damage Dice techniques become something you can learn much like how a wizard learns spell. Go find a manual that explains it, fight someone who uses it against you and then practice it, train with a master, etc.

I might use your feat as well, though if it still looks like it did the OP, I'd say that I'd add the following;

If you are already proficient with unarmed strikes, you can add your proficiency bonus to the damage roll of a melee weapon attack with your unarmed strike, once per turn.

This firmly makes such a feat good for a monk or a fighter with the unarmed fighting style.
 

I would not add maneuvers to unarmed "feat", leave that as a separate feat and battlemaster.

Here is my take on it:

Martial artist:
Your unarmed damage is 1d6 or 1d10 if you have both arms free and not being grappled/grappling/in difficult terrain.
You can use STR or DEX for attack and damage bonuses.
As a Bonus action you can make one unarmed attack one Shove or one Grab attack
When you are grappling a creature, you have advantage on unarmed attacks vs that creature.

Personally, I prefer the maneuvers. It allows for styles that focus on grappling, striking, or are a blend of both.
