Yaaa.. no. I think it would just flatten characters and negatively impact any 'mundane' characters even more unless we completely overhaul a bunch of formulas. some calculation for 20 STR are already lower than real world records.

I disagree on the "negatively impact", capping it at 18 would apply diminishing returns to the most basic & thoughtlessly bland CharOp (pumping one stat in a campaign cradle till grave). Those diminishing returns would incentivize other more interesting & varied choices before the campaign is wrapping up.

Huh? You can't get more than a 15 before racial bonus at level 1.
Some people roll. Heritage bonuses can presumably take you to 17 at level 1, ASI feat to 19 at level 4, and then a second ASI feat to gain 1 point reach 20 at level 8. I am not 100% on whether and when stat increases crop up from backgrounds etc in the playtest but in any event, this requires extra investment to reach 20. It's a half way house relevant to the thread.

Plus charging 2 points to move from 19 to 20 has precedent. It took 10 wishes to increase a stat beyond 18 in 1e!

Yeah I hate stat boost items in 5e. They were poorly designed in 3e too. Gauntlets of Ogre Power should be +2 strength (max 19), wearer is treated as a large creature for pushing, tripping, grappling, carrying etc.

Girdles should be +4 strength (max based on type of giant), wearer is treated as a huge creature for pushing, tripping, grappling, carrying etc.
I disagree. That is how they were in 3E and I hated it. If my 8 strength Rogue puts on a Gauntlets of Ogre Power he should have a 19 and to be honest this is the most common use of the item in games I play.

In games I play the Rogues and Bladesinger Wizards are who usually takes the Gauntlets of Ogre Power. This frees up ASIs so they don't have to pump dex. On the Rogues this means a lot of feats. Belts of Giant Strength usually go to melee characters, but as often as not it is a dex based fighter or ranger.

I would be ok with a max stat of 18, but I don't like the idea of nerfing the items that give you X Stat.
