At this point who is actually running the new republic in coruscant and who in the original movies would be living there?
I don't think we have clear answers to that. Probably Jar Jar is still there though.
Where was the empire located during this
This is clearer - the Empire was destroyed. It isn't "located" anywhere in particular. It doesn't have a capital or a leader. However, there are "Imperial remnants" or "Imperial warlords" bouncing around, and indeed this episode Din (with rather uncharacteristic insight, so presumably serving at Basil Exposition) points out that the large number of TIE Interceptors/Bombers involved with the attack on Bo-Katan's base suggests it is not a mere Imperial warlord (which would presumably be one dude with a Star Destroyer of some kind going around menacing people), but someone else - presumably a more organised/equipped ex-Imperial.

And it's called out that these are superior to standard tie fighters. That wasn't some petty warlord with war surplus that attacked attacked The Party as they left Mandalore. I reckon Moff Gideon has a major secret base on Mandalore, and spread the stories of the planet being poisoned in order to keep away unwanted visitors.

Also, there needs to be something to attack with the Mythosaur and I can't see it fitting in the hold of Din's starfighter (even if it is bigger on the inside than it is on the outside).
 

And it's called out that these are superior to standard tie fighters. That wasn't some petty warlord with war surplus that attacked attacked The Party as they left Mandalore. I reckon Moff Gideon has a major secret base on Mandalore, and spread the stories of the planet being poisoned in order to keep away unwanted visitors.
Either that, or he was coming after Mando and/or Bo Katan specifically. He's got beef with both them.
 

I like seeing the New Republic is not some saintly government, mainly because no government ever could be. And people shocked the New Republic would use Imperial tech, must also be shocked that the US government used Nazi tech after WWII.
I am more shocked at the schizophrenia.
Republic Guy I: "Hey, let's get rid of these perfectly good Star Destroyers and Alliance ships that have legitimate military uses for our defense forces or the defense forces of our member worlds."
Republic Guy II: "Great idea, good friend! But keep the mindflayer device. We just use the low settings, everyone will agree to not abuse that or accidentally set it on a higher setting. We also don't generally need to supervise mind-altering intrusions in people, either, though we could have spectators in the control room device for emotional support of the patient."

It was world-building, and some of it was nice, but some of it just seems ... unbelievable.
And to be fair - the Empire also dismantled all the Seperartist and Imperial ships for no real apparant reason. Sure, the ISD was superior to the Venator, but 95 % of the stuff the Empire used an ISD for cold be done by a Venator, I'd say it would be cheaper to keep them and just roll out the ISDs a little more slowly.

They could have just glued a stop on the dial of the bloody thing.

Well, Imperial military vessels are a very visible symbol of the old regime. They are also built around the doctrine of military force, requiring massive crews and dedicated support systems that the New Republic wouldn't necessarily want to fund.

And they haven't abandoned all Rebel Alliance vessels. New Republic officers still patrol in X-Wings.

It was mentioned in the show however that they were also dismantling the Alliance fleet.
For now they still have something at least, but we know by the sequels it's basically all dismantled and what's left is what the Resistance has.

Thst is consistent with the new canons. Disarmament was established in earlier Disney canon.

The Empire still technically exists in New canon not clear where/how tgey are run.

Basically they had to disarm no stormtroopers no ISDs and retreat to designated areas. Essentially they surrendered.

The imperial Remnants kinda like old EU with the Empire and warlords. Except in Disney tge Remnants are Essentially war criminals refusing to surrender.

Also, there needs to be something to attack with the Mythosaur and I can't see it fitting in the hold of Din's starfighter (even if it is bigger on the inside than it is on the outside).

I know interceptors are superior but it's nice they have been explicitly called out.

I used a couple of Thrawns ones in my Star Wars RPG last week. Thrawns ones are equipped with shields.

In D6 they're kinda nasty Stat wise.
