There was also piecemeal armor rules in some 2E book. I forget which one. Maybe the complete gladiator's or fighter's book. I don't remember where, but I remember using it.
Complete Fighter's Handbook, and reprinted in Dark Sun.

They'd be hard to transfer over to later systems, because 2e basically only cared about AC and weight regarding armor. Later editions get a little more detailed with things like penalties to certain checks, limits on how Dex applies, and so on. Also, some of the armors are essentially pre-made piecemeal armors – e.g. breastplate "consists of a fitted metal chest piece worn with supple leather."

so, it's been a while but does D&D even have stats for individual pieces of armor? I think GURPS does in one of the books

Its not particularly common in modern games, but it once was moreso: of modern games that do it, GURPS, Hero System and Savage Worlds do so, as does RuneQuest. You'll note most of those have a very long lifespan.

Is the weight broken down by each individual piece or a total? It seems to me that in theory unless you outright state it that your PC could be going without the helmet or any face covering or in theory any actual piece.

Also, these are supposed to be Scarlett Johansson as a dungeons and dragons fantasy warrior, and I'm sure there are all kinds of little things about the pics that are off

Is the weight broken down by each individual piece or a total? It seems to me that in theory unless you outright state it that your PC could be going without the helmet or any face covering or in theory any actual piece.
The 2e armor rules in general only gave armor a total AC and total weight. Helmets, as far as I can tell, were mainly ornamental – using them didn't affect your AC (I believe 1e had rules about monsters attacking unarmored heads, but 2e removed those). So let's say chain mail gives AC 5 (so 5 points of bonus from the base of 10), and weighs 40 lbs. Then piecemeal would be something like:
Torso: 2 points, 16 lbs.
Both legs: 2 points, 16 lbs
One leg: 1 point, 8 lbs
Both arms: 1 point, 8 lbs
One arm: 0 points, 4 lbs

Then you'd sum up the total points and subtract from 10 to get the AC offered by the armor.
