Well those gyros you speaking of are Greek American which focus on lamb and beef otherwise the traditional is pork (sometimes chicken) wrapping within a pita with the usual suspects.

It’s been a day of multiple threads that all earn the same response for me: Thank you, no, I declined to discuss my preferences on a matter where the OP and others have already declared them bad and unacceptable. I can just sit here and pet the cats wrong until they lash out, or hit my head on the desk a few times.

I‘d be up for explaining, but not defending. I’m not on trial, nor a specimen to be analyzed and prove at others’ whim.
 


I have celiac. You basically need to read every label. With stuff like spices, it is a good idea to check the website too because some times gluten isn't always clearly marked on the labels (there are a lot of foods and products where 'natural flavors' could mean a lot of different things). Eating out is very much at ones own risk. You learn over time what places are more successful at it than others, but it is a challenging condition to prepare food for (even I get things wrong sometimes cooking for myself)
Totally. And taking family out to eat—-due diligence!

I have not gone to some restaurants for years because it won’t feed the whole family. Laces that advertise a gluten free menu often work and get our money…
