Personality and appearance is now part of your Abilities. The sequence for building a character concept is: class, background, species, and then abilities. I go Species -> Background -> Class -> Ability Scores

It just seems more intuitive starting at the characters birth and moving forwards.

Technically you should do Ability Scores first then, since that sets your inherent talents. Personally I go Race, Class, Ability Score, then Background.

I love the short blurbs via table for the abilities. That'll help me with NPCs

Not at all. Each player has their own way of designing their character.
