You could easily design a 0th or 1st level spell that deals one point of electrical damage automatically and still utilise the crazy possibilities of Shambling Mounds. Make a few wands of the spell and zap it for an hour or two and you have a ridiculously hard-to-kill well-camouflaged creature.

The problem is controlling Shambling Mounds.

Spell Compendium has Thunderhead: a Druid 1, Sor/Wiz 1 spell that zaps the target for 1 point of damage each round for 1 round/level. There's a ref save to negate the damage each round, but the mound could choose to fail the save, and why wouldn't it?

Simulacrum brings up the same issue - even more so, because the creature is totally under your control and permanent. Sure, its expensive, but if you find a creature with the right HD/power ratio then it's very much worth it.

Right off the top of my head - Symbiotes are creatures, and they generally have low HD. And Pixies make good bodyguards, especially the dance-inducing kind.
