I understand it's SW, so the good guys have to make almost all dumb decisions.... Maybe I just want a SW where the good guys don't do that over and over....

Those decisions are all about exploring narrative and character, not advancing toward rational goals. They're ROLE players, not ROLL players.
 



It is likely that Ezra did not want the light saber because maybe he was afraid his Force powers and the Kyber crystal interacting would be a huge beacon that would alert the Nightsisters to exactly where he was.
I think it’s more likely he didn’t want it because he’s learned to fight using the Force without it. He seems to have developed his own Force-powered martial arts.

Every time? You can also have narrative with characters that make good decisions, except in SW.
Star Wars is essentially a soap opera in space. If you’re looking for something more intellectual, there’s always Star Trek …

And again, how is this a terribly bad decision?

She knows that when she tells Ezra, he’s not going to be happy. That’s a given. She has no idea that they are currently in danger. There’s no pressing reason to tell him right now and many reasons not to.

How is that implausible?

Mmmmm, I don't agree. You can explore narratives and character while also advancing towards rational goals. You aren't required to allow "evil to always triumph, because good is dumb." in order to be roleplaying.
