There's also Momotaro the Peach Boy (Japanese) tho its more of a short story. If you're willing to allow graphic novel type stuff, then a whole world opens up with manga, many of which have been adapted into anime.
Depending on how you define "fantasy," the First North Americans series (<i>People of the . . .</i>) by W. Michael and Kathleen O'Neal Gear are applicable. They are based firmly in native American mythology and have fantastic elements. <I>People of the Wolf</i> is the first, though each is self-contained and really has nothing to do with the others. There's 10+ of them in the series now.
