D&D 5E Am I no longer WoTC's target audience?

Well, sure: I don't care about the professional/amateur distinction much at all, but if we are going to distinguish that, the Kobold Press or Green Ronin are equally professional to Paizo or Fantasy Flight.
Kobold Press has not published a set of successful, individual, RPG rulesets, unlike both FFG and Paizo.

I would rather have an excellent product that was designed by a casual gamer than a trashy and imbalanced product designed by a professional.

There's nothing wrong with a 3PP company focused on producing settings and mechanics and whatnot just for 5E. I don't think it reflects one way or the other on the professionalism of the company.
 


So my question is, do you think it's possible for a book to look professional even if the publishing house that produces it isn't "professional"?

Yes. Outsourcing to professionals produces a professional-quality book. But several long-standing 3rd-party D&D publishers do not do that, unless by outsourcing to a professional they mean paying a gaming buddy who has Microsoft Publisher to do it.
