I'd think they'd have skills as the base creature, not as if their racial HD become outsider HD, since unlike half-fiends they are turned into fiends, not born fiends.
They need fire resistance, probably increasing with HD.

What resistance and magic boosts shall we give them then? It starts out pretty weak at 10% but (according to rumour) goes up to "not to fear fire of any type" with immunity to anything short of dragon's breath.
I would like to have the level/HD steps a bit wider than the Demonic Knights of Doom's 4-5th / 6th-7th / 8-10th / 11th+ level. How about basing it on the Fiendish Template's 1-3 HD/ 4-7 HD / 8-11 HD / 12+ HD?

Should we change the name from "Infernal Weapons" to make it clearer that it's a property of the Knight and not the weapon? Something like "Fiendish Blows" of "Infernal Attacks".
How about a racial bonus to Intimidate then?
You can drop "Evil" from the list past 12-15 since "An unholy weapon is imbued with unholy power. This power makes the weapon evil-aligned and thus bypasses the corresponding damage reduction."
Actually, I'd rather just list in the ability "Any weapon wielded by a fiend knight is treated as evil-aligned for purposes of overcoming damage reduction", and then list the table sans "Evil".
