That meal was fairly good tbh.

I haven't been here for a while. I have had a dry run of creativity, but something broke through.

Chicken breast, boneless, Butterfly cut

One slice of thick cut smoked bacon placed in cut chicken breast.Scewer closed in an "X" fashion

Drizzle generously with wishbone zesty Italian dressing, add a sha-boom of Cayenne pepper

Grill on low heat until thorough cooked. Remove to a pan with chicken broth, garlic,mushrooms and lemon zest. Cook each side for 3 minutes. Let rest in broth, covered for 5 minutes.

Serve with a smile.

So made a healthy burger tonight. Bun was tge unhealthy part if tge meal.

Low fat beef pattie
Chicken bacon
Small serving of air fried chips.
Salad in burger
Snall amount of grated cheese
Mustard and Small amount of BBQ sauce.

Thus is our "bad" meal for the weak. Some sort of calorie counting diet plus exercise.

I don't have to do much as a male of my height and weight. Lost close to 7kg. Daily walking and hiking plenty of tracks. A lot harder for wife I basically get to eat an extra meal a day or eat 3 meals, snacks and sonething unhealthy and still lose weight.

Burger wasn't as nice as my old ones but it was nice enough wasn't unpleasant. Probably a bit drier than preference.

We get one cheat meal a week. Basically something close to a normal day.

Last week's cheat. First dinner dine out in 6 weeks FILs birthday. It was good but should have ordered a steak think last time I ate that was July.

As a classic American fatass who is also the family cook, selecting and making healthier meals- including portion control- has been a longstanding battle.

It’s also odder for me because I really don’t have much of a sweet tooth…at least, not in decades. Sure, there’s certain sweets I’ll pig out on, but I’m MUCH more likely to order an appetizer than a dessert. When I was at my fattest, I was doing things like eating a 16oz+ steak instead of devouring a mountain of ice cream.*







* I used to make huge sundaes as a kid, but that stopped in my late teens, as did my consumption of soft drinks.
 

Here's how to make realky good stuffing:

Two to three sticks of butter
One and a half cups of chopped celery
Three quarters of a cup chopped onion
Two teaspoons salt
One and a half teaspoons sage
One teasponn thyme
One half teaspoon pepper
A big loaf of white bread cut into cubes

Then melt the butter in a pot and mix everything together in there on low heat.

Optionally then jam it into a casserole dish and bake it for a while but I forget offhand for how long and at what temperature. Just in the pot on low heat is sufficient though.

I'm assuming the onion and celery are finely chopped, right?
The big load of white bread cut into cubes is interesting, not that I know much about cooking.
 

Thanksgiving dinner was something of an adventure, though not so apocalyptic a mess as in some past years.

Slow-roasted potatoes (yer basic olive oil, salt, and pepper, with a Middle-Eastern chili spice blend)
Curried coq au pumpkin biere (a riff on a riff on a Cooks Illustrated recipe)

Individual-size chocolate souffles
