Do Uncanny Dodge levels stack?

I've noticed that a few prestige classes in the splatbooks include Uncanny Dodge among the class abilities, with the additional instruction that if the character already has Uncanny Dodge, then the levels stack.

Would this hold true for a Rogue 3/Barbarian 2? Rogues get their UD-dex bonus at level 3, and their can't-be-flanked UD at level 6, while the Barbarian gets his at levels 2 and 5. Assuming that UD stacks with all character classes, a Rogue 3/Barb 2 would be immune to sneak attacks (aside from high-level rogues and all that). Is this true? I ask because I'm putting together the angriest Dwarven Rogue PC ever, and want to make sure I'm getting this right.

Yep, they stack. However, realize there are other ways to deny you your dex bonus besides being flat-footed. You can still be sneak attacked if pinned, stunned, grappled, asleep, held, paralyzed, or otherwise rendered helpless.

Right, no books here, but I recall the correct answer as being:

Total your levels in all classes that grant UCDodge.

Then check all the relevant tables, and work your ability out using this combined level on the most favourable of those tables.

IIRC this generally means using the Rogue table.

PHB, section about multiclassing, rather towards the end. Example: Multiclassed chars with Uncanny dodge from different classes use the barbarian advancement (better than rogue)

You got it exactly.

Obviously Gumby is a bit young, or a bit naive, or a bit innocent, or perhaps a bit of all three. Where most of us just follow our instincts when it comes to the rumpy-pumpy, he has to have a manual. But he's a diligent lad, and so every week, he sets aside a particular night to consult the relevant section of the manual before getting down to business.
