Please tell me this was a multi-phase combat, where once you got through the turkey's hit points, it keels over, pukes up the duck and HERE COMES ROUND 2.
It was a three-headed chimera as large as a horse whose mythical power was to attract all the turkeys, ducks,, chickens, and cockatrices in the region to swarm in the area. It has a rechargeable Thunderous Quack power and a bonus action Squawk power that imposed disadvantage on the target. The turkey pick attack required a save or fall asleep for a round.

It proved to be a dangerous fight for the 4th level PCs.

Next year, I recommend adding a tryptophan aura.
 


My turkey was: first we started with a hummingbird. Put that in a sparrow, stuff them both in a cornish hen, then put that in a chicken. Put all that in a duck, then a turkey, then in a bigger turkey. (it's thanksgiving) Put that in a penguin, stuff that in a peacock, then an eagle, shove it all in an albatross, then an emu, next comes an ostrich, then a leopard! Put all that in a pterodactyl, and then stuff it in a Boeing 747, then we deep fried it.

The leopard was for presentation.
 

What I don’t understand is why American Thanksgiving is so late. If your harvest isn’t in by October it will be wrecked.
Because our current Thanksgiving isn’t directly tied to the harvest. The holiday as we know it today wasn’t finalized until the 20th century when it was fixed to a particular day.
